6 chicken breasts
2 cups of cheese
Vegetable Oil (amount will depend on how many quesadillas you make)
Fajita Seasoning packet
Red pepper, green pepper, onion
Bake 6 chicken breasts in a cake pan with veggies, add in two cups of water, for 30 minutes at 375 degrees. Remove the chicken and place it in a skillet with three table spoons of oil. Take two forks and shred the chicken. Cook the chicken until it appears to be fully cooked, add in a packet of fajita seasoning.
Remove chicken from pan, add oil to the skillet, place a soft taco shell into the skillet. Sprinkle cheese on the soft shell taco, add desired amount of chicken to the taco shell, allow the cheese to melt, take one more taco shell and flip the first shell into the new shell. Keep an eye on the shell until it is a light golden brown. Place on a plate and use a pizza cutter to make the quesadilla into triangles. At this point you can add tomatoes, lettuce, sour cream. Enjoy!
